Your top "natural wine" of 2010
Please at least agree on what "natural " entails......my suggestions for inclusion would mandate:1.grapes must be harvested from a biodynamically run vineyard2. no commercial yeasts or enzymes for fermentations3. no additions or additives as well as sugar(in any form)4. no SO2 at any level of the process-fermentation,elevage, bottling5. aging in concrete,steel, or ancient wood casks/foudres(preferably neutral steel or concrete)6. no residual sugar7. no fining agents or filtrationthat is a "natural' wine....unfortunately it can't be drunk outside of 5-10 KMs of the place of origin,and must be sequestered in a cold cellar....if anyone can tell where to find such a wine please speak up.... as this could be the hottest wine category and fastest way to make a fortune since Bernie Madoff was a "sure" thing......
